- Design and execute experiments: Plan and conduct experiments to develop and optimize plant-based fat formulations with a focus on enhancing food-related functionalities. This involves conducting comprehensive literature reviews and devising experiment protocols.
- Process Optimization: Develop and improve manufacturing processes for plant-based protein products, focusing on efficient and scalable production while maintaining product quality and integrity.
- Characterization: Utilize various analytical techniques, such as DSC, TGA, FTIR, calorimeter, and others, to characterize and assess the nutritional, functional and sensory properties of plant-based fats.
- Quality Assurance: Establish quality control procedures to ensure consistent product quality and safety. Conduct shelf-life studies and troubleshoot any issues related to product stability or performance.
- Application: Investigate the functional properties of fat alternatives in diverse food applications through rigorous experimentation.
- Technology assessment: Remain updated on the latest advancements in the alternative protein domain. Identify and implement innovative techniques and methodologies to improve efficiency and productivity.
- Market Research: Stay updated of industry trends, consumer preferences, and competitor products to identify opportunities for innovation and improvement.
- Collaboration and documentation: Collaborate effectively with cross-functional teams, including customers, to gather feedback and iterate on product development. Maintain meticulous records of experiments, protocols, and results. Contribute to technical reports, presentations, and scientific or IP documents as required.
- Supervision: Provide training and guidance to interns.
- Safety and compliance: Adhere to strict safety protocols, maintaining a clean and organized laboratory environment. Ensure full compliance with relevant regulatory guidelines and company policies.
Qualifications and Requirements:
- Ph.D. or Master's degree in Food Science or a related field. Candidates with a Master's degree should possess a minimum of 2 years of relevant work experience.
- Ideal candidates should have a proven track record in designing, planning, and successfully executing projects.
- Extensive experience in plant-based product formulations. Proficiency in characterization tools such as DSC, TGA, FTIR, calorimeter and Texture Profile Analyser.
- Solid understanding of flavor encapsulation, lipid chemistry and lipid-protein interactions.
- Exceptional problem-solving skills with the ability to troubleshoot formulation processes effectively.
- Strong organizational skills with keen attention to detail and adeptness in managing multiple tasks concurrently.
- Effective communication skills, enabling seamless collaboration with cross-functional teams and presenting scientific findings convincingly.
- Self-motivated, proactive, and capable of both independent and team-oriented work environments.
- Ability to thrive in a fast-paced and dynamic research and development environment, adapting to changing priorities and challenges.
- Knowledge of regulatory guidelines and safety practices relevant to laboratory work.

- To handle all new raw material registration, documentation and evaluation.
- To perform QC such as sensory and visual checks on all finished products produced by the manufacturing line and incoming raw materials or new raw materials.
- To maintain the R&D laboratory and ensure cleanliness within the laboratory.
- Housekeeping on sample storage.
- Maintenance of equipment including cleaning and calibration.

Experimental analysis
- Plan and conduct experiments to develop food formulations with novel ingredients to develop functional food products.
- This involves conducting comprehensive literature reviews and devising experiment protocols.
- Preparation of reagents and samples for testing.
- To evaluate current and alternative food ingredients.
- To analyze samples using various analytical techniques, such as DSC, TGA, FTIR, calorimeter, and texture analyzer.
- To characterize and assess the nutritional, functional and sensory properties of food samples.
- Provide training and guidance to interns.
Quality Assurance and safety
- Establish quality control procedures to ensure consistent product quality and safety.
- Conduct shelf-life studies and troubleshoot any issues related to product stability or performance.
- Adhere to strict safety protocols, maintaining a clean and organized laboratory environment.
- Ensure full compliance with relevant regulatory guidelines and company policies.
Technology assessment
- Remain updated on the latest advancements in the alternative protein domain.

Qualifications and Requirements:
- Master's degree in Chemical Engineering or Food Science. Candidates with a Bachelor’s degree will be considered with a minimum of 3 years of relevant work experience.
- Ideal candidates should have a proven track record in bench-top lab work, experiment design, data analysis, and interpretation.
- Extensive experience in food product formulation, characterization, and analysis.
- Adept in benchtop lab equipment for formulation, testing and chemical analysis in the lab.
- Proficient in characterization tools such as DSC, TGA, FTIR, calorimeter and Texture Profile Analyzer.
- Enthusiasm to learn new approaches and drive research projects.
- Exceptional problem-solving skills with the ability to troubleshoot formulation processes effectively.
- Strong organizational skills with keen attention to detail and adeptness in managing multiple tasks concurrently.
- Must have great attention to detail, be highly independent at the same time a team player, motivated, proactive, and creative to accomplish complex tasks.
