About the Job:
Fattastic Technologies is excited to announce an opening for a Food Scientist in our Research and Development (R&D) team. As a key member of the team, you will be at the forefront of developing and optimizing plant-based fat formulations with enhanced functionality, driving innovation in the alternative protein space. Your work will contribute significantly to sustainable and groundbreaking solutions in the field of alternative protein.
Key Responsibilities:

Design and execute experiments: Plan and conduct experiments to develop and optimize plant-based fat formulations with a focus on enhancing food-related functionalities. This involves conducting comprehensive literature reviews and devising experiment protocols.

Develop and improve manufacturing processes for plant-based protein products, focusing on efficient and scalable production while maintaining product quality and integrity.Process Optimization:

Utilize various analytical techniques, such as DSC, TGA, FTIR, calorimeter, and others, to characterize and assess the nutritional, functional and sensory properties of plant-based fats.Characterization:

Establish quality control procedures to ensure consistent product quality and safety. Conduct shelf-life studies and troubleshoot any issues related to product stability or performance.Quality Assurance:

Investigate the functional properties of fat alternatives in diverse food applications through rigorous experimentation.Application:

Remain updated on the latest advancements in the alternative protein domain. Identify and implement innovative techniques and methodologies to improve efficiency and productivity.Technology assessment:

Stay updated of industry trends, consumer preferences, and competitor products to identify opportunities for innovation and improvement.Market Research:

Collaborate effectively with cross-functional teams, including customers, to gather feedback and iterate on product development. Maintain meticulous records of experiments, protocols, and results. Contribute to technical reports, presentations, and scientific or IP documents as required.Collaboration and documentation:

Provide training and guidance to interns.Supervision:

Safety and compliance: Adhere to strict safety protocols, maintaining a clean and organized laboratory environment. Ensure full compliance with relevant regulatory guidelines and company policies.
Qualifications and Requirements:

Ph.D. or Master's degree in Food Science or a related field. Candidates with a Master's degree should possess a minimum of 2 years of relevant work experience.

Ideal candidates should have a proven track record in designing, planning, and successfully executing projects.

Extensive experience in plant-based product formulations. Proficiency in characterization tools such as DSC, TGA, FTIR, calorimeter and Texture Profile Analyser.

Solid understanding of lipid chemistry and lipid-protein interactions.

Exceptional problem-solving skills with the ability to troubleshoot formulation processes effectively.

Strong organizational skills with keen attention to detail and adeptness in managing multiple tasks concurrently.

Effective communication skills, enabling seamless collaboration with cross-functional teams and presenting scientific findings convincingly.

Self-motivated, proactive, and capable of both independent and team-oriented work environments.

Ability to thrive in a fast-paced and dynamic research and development environment, adapting to changing priorities and challenges.

Knowledge of regulatory guidelines and safety practices relevant to laboratory work.
